Amaranth is one of my new garden favorites. I’ve been trying out several different varieties and these two are the standouts to my eye. I’ve got a few other varieties growing now and am looking forward to sharing the results. The young greens are a tasty addition to salads and a spinach alternative in other dishes. The grain is edible and tasty as well. I’ve tried using it in my kitchen with varying results but I’m sure someday I’ll get it right. The plants haven’t really required any special attention. They’ve held up well to dry conditions wet conditions and slightly cold nights. A dip in temperature early this season absolutely stalled them but they came roaring back.
This plant will be in my personal veggie patch next year as well as my fathers ornamental gardens. This is a very versatile plant. Also known as Josephs Coat, Summer Poinsettia, Chinese Spinach, Callaloo
